If there is one little swap you can make to your snacking it’s how you buy CRISPS! You’ll never have to throw potato peelings away again. Did you know in the UK we throw away 5.8 million perfectly usable spuds PER DAY at a retail cost of..wait for it…£230 million!! (stats taken from WRAP).
I make these at the weekend after my husband has prepped the potatoes for our Sunday Roast, you can also use other seasonal veggies like parsnips and carrots peelings.
1. Save peelings (make sure there’s no mud on them if you’re lucky enough to get washed potatoes) washed if needed then dab dry on a kitchen towel
2. Toss the peels with oil and seasonings like salt, rosemary,cayenne pepper
3. Roast in the oven for 15-20 mins at 180
4. Serve! we have these on a Saturday night watching the TV. They don’t keep terribly well so you need to eat them within a day or so.
