Vegan Banana bread

This is a GAME CHANGER of a recipe because it is so easy, so tasty and you can add things to it.

*2/3 (ideally 3) bananas mashed *2 tablespoons chia seeds (I don’t always have these so don’t worry if you leave them out but you will need to add a tablespoon of water to the mixture) *6 tablespoons water *110ml rapeseed oil *100ml maple syrup OR 1/2 cup brown sugar – if you use dark brown sugar, the molasses gives the bread a real caramel taste *1 cup white flour + 1 cup wholemeal flour (you can use self raising flour and ditch the baking powder) *2 tsp baking powder *1/2 tsp salt *1 tsp each cinnamon

1.Mash the bananas in one bowl, put all dry ingredients in the other

2. add the oil syrup to the bananas stir through then add to the dry ingredients. Fold the two together rather than stir.

3. pour into a baking tin or silicone loaf tray making a little dip in the middle of the mixture to allow the loaf to rise. I also add a sprinkle of oats on the top.

4. bake in the oven slowly at Gas Mark 5/ 190 F for about 40 minutes. Check it’s baked through by putting a knife in it, if it comes out dry it’s time to bring it out of the oven and let it cool before you devour it!
